Monitoring Web Traffic, through an external proxy

Hello Guys,
I believe this should be pretty straight forward but I wanted to make sure I was headed in the right direction. Here is my current set-up. I have a PTP, direct connection to a building where our main server is which has a vpn to a proxy that will allow internet. This proxy must be for set up on each clients computer, for example in windows - internet options -> connections -> lan settings -> enable proxy.
I want to monitor the internet traffic and get stats on most visited sites, open connections, etc.
Would I be better off setting up another web-proxy on the MT radio that routes into the building where the computers are using the internet proxy or should I just enable connection tracking (ip -> firewall -> connections).
What do you guys think????
