I am thinking of buying a Mikrotik Hex S router (RB760iGS).
My ISP provides gigabit internet with IPv4 via PPPoE and IPv6 via IPoE, would Hex S support both of them?

It shouldn't be a problem. Let's assume you'll use ether1 port for ISP connection ... so you're going to configure /interface pppoe-client interface=ether1 for IPv4 and /ipv6 dhcp-client interface=ether1 for IPv6.
