How do I prioritize traffic with fluctuating uplink speed (LTE)?

Hi,

what I want is simple: I want the guest subnet (or bridge-guest) to be eating leftovers of LAN (bridge-local) only but my LTE uplink is unrestricted. This means I can have 70/30 and sometimes it's just 7/10Mb/s.
How would you set this up? I don't care if there is nothing left for the guest network. Cheers!
