CHR + Vmware ESXi 6.7u3 and MPLS

Good evening

I am looking at changing the design of our network to save public IPv4 addresses and need some advice. At the moment, we are running 2 instances of CHR on 2 dedicated boxes each running VMware ESXi 6.7u3 with dual-channel 10G NICs going into a switch mesh to avoid any SPOF. We are wanting to enable MPLS and create VPLS links to each tower and then backhaul the customer PPP sessions onto our two core routers. Currently, we are pushing 1-2Gbps of traffic most days.

I have seen a presentation at a Mikrotik User Meeting in 2019 that advises using Hyper-V because there is a buffer issue in all other implementations. The question I would like to know is:
1. Does the buffer problem still exist today and if it does, how bad is the issue if I attempt this on our existing ESXi infrastructure. Changing hypervisors whilst in use will be a total pain?
2. Is anyone else using this setup because I have never worked on MPLS before?
