Yes, you can. Capsman should support an unlimited number of Mikrotik AP's, at least in theory.
As gear, maybe a rackmounted ccr2004 or ccr1009 and any outdoor/indoor mikrotik wireless that suit your needs ?
If you have a scenario involving p2p wireless bridges and redistributing wifi after this links, you can't control wireless bridges on capsman. Still, you can make the wifi backbone and control the ap's to the clients from capsman. Ex: if you have a mikrotik board with 3 radios, 1 wifi radio can be used to make the wireless bridge and 2 radios can be controlled by Capsman.
