Unstable wireless connection to smart devices

I have a problem with Chateau LTE12 (RBD53G-5HacD2HnD-TC&EG12-EA) and it's WiFi side side of things mainly.
I have 3 smart thermostats that are giving me trouble as they will not stay connected to the WiFi. Before getting the MikroTik I had a Huawei Cat.4 LTE router that worked fine, but as I have many wireless clients, Cat.4 was not cutting it. After upgrading to the MikroTik, I noticed that the thermostats would lose connection (app would show them offline and displays would be blinking white). I contacted MikroTik support and we figured out that it was a poorly configured WiFi interface from the box (I wonder why a prosumer device would be poorly configured our of the box...).

All was fine for about a year, when I noticed that I was unable to use my VPN client for work. For some reason, I had internet connection but VPN connections were not allowed through. I decided to upgrade the software in my router as I had not updated it from a beta version. And this is where it all started to go wrong... For an unknown reason (or my impatience) the software upgrade failed and I had to do a manual recovery. After I reconfigured everything as it had been, my internet connection and VPN worked fine, but the thermostats were not happy. They would randomly drop connection and then never re-connect. I started going through logs and found that the thermostats seem to disconnect themselves at very short intervals, which I find very odd...
The 3 thermostats I have are all from different production runs, but the 2 newest ones use MQTT via AWS and the oldest one seems to run on just HTTP. The main issue concerns the new ones with MQTT, the old one seems to be quite stable (uptime in months).

I have contacted the manufacturer of the thermostats and they said that they are aware of connection issues with MikroTik devices but also that they have no solution at the moment. I have been in contact with MikroTik support since June 2021 and so far no luck. I have been considering changing to a different router...
