Assigning static using 1-to-1 NAT

I am going to do my best to explain what I am trying to do, so please keep in mind that I am new to RouterOS and I may not get everything quite right. If anyone needs further clarification, please reply to this post and I will expand on the topic.

I have a series of subnets in RouterOS that I am trying to branch out and use in different ways. All of the subnets have a few static IP addresses sitting on them, and the static addresses are assigned using the equipment MAC address. For example, I have a subnet of 10.1.19.128/25. Inside of this subnet, there is a router with a MAC address of AA:BB:CC:11:22:33. In the DHCP Server → Leases section of the Winbox software, I have set it up so that whenever this router broadcasts its MAC address to the network, then it always gets an IP address of 10.1.19.131. Now, here is where I am stumbling. If I want to place other static IP addresses behind this router, and use the router in a 1-to-1 NAT, how do I get the static IP addresses to these devices? In other words, say I wanted to run an Exchange server behind the firewall and give it 10.1.19.132. I can get the MAC address of the Exchange server, but will it show up where the Winbox (RouterOS) will see it? Another way to ask the question, or maybe another part to the question, is how do I remove the IP addresses from the DHCP pool so they can manually be assigned to the equipment behind the router? I am not sure which would be easier. The MAC address to static IP address works great, I am just trying to take this a step farther and I am stumbling around.

If it goes Router 1 ----> Router 2 -----> Exchange Server
then change router 2 to a switch, then the exchange server will get it’s static IP from the router.
