All mikrotik devices sport all ROS features, so for lab use almost any device will allow you to setup labs.
Unlicensed CHR will be limited to 1Mbps, but again, for a Lab this still allows to setup any scenario, and you can get an unlimited temporary license for 60 days. You can run user-manager or dude server on it.
That being said, if want to invest some money, and get used to specific physical hardware differences, my pick would be
- A CCR1009-8G-1S: Allows you to play with hardware switch features, and direct CPU ports. You can run user-manager or dude server on it.
- A CRS to get familiar with switches. Some, like CRS326, can boot either RouterOS or SwOS.
- Second hand RB1100AHx2: this device has been the workhorse of Mikrotik lineup, if you find one second hand is a real value router. Also offers two switch groups and independent, direct to CPU ports. No dude server support.
- Hex (750Gr3) Little mean dual core router, sports IPSec hardware acceleration. With proper optimization this $60 router can push 1Gbps. You can run user-manager or dude server on it.
- For multiple physical routers setup, play with wireless, test CPU loads, etc: mAP, hap lite are really unexpensive routers, allowing you to setup HA setups including wireless with 6, 8 routers for a little investment.

Not that I am aware of. To get trained the best (and only approach) is attending real life certifications.
