i just but a few mikrotiks (groove&sxt) at minus 30C, and the display of system health doesnt show the temperature.
If it heats up a little bit the display shows the value (for example 8 degrees)…
is this a small bug? is it not recommended that the processor is below 0C?

The displayed temperature range starts at -25C°.

No, that was the last Winter (January). I do not know, maybe 5.8. It is next Winter so cold again.
It is a software thing, the devices themselves will work fine at such temperatures or colder.
