Hello, I plan to get an hEX S 2025 and connect it to my Fiber via an Ethernet ONT (1 GBit) to the eth1 port of the hEX. The hEX will manage the PPPoE session.
Will the hEX be fast enough to get the full 1 GBit of my connection, or should I consider a RB5009 ? (which would be overkill generally for me)
Maybe someone has benchmarks to share.

Search forum for hex S 2025. That model has some issues but new version of ROS helps a bit.
Honestly, if your budget allows it, go for RB5009 or, if wifi is needed then maybe ax3 is not a bad choice. But with RB5009 you are futureproof.

it is good for 1 gigabit, for this money you will also get about 130-150 Mbps IPsec, twice the speed on Wireguard, and about 250-350 Mbps in complex scenarios
also note that the recommended firmware is 7.20beta4-5 and higher, because it fixes a number of problems that are present in the current stable 7.19.4, but since the device is new, there are still problems, especially in the version with sfp

5009 is a very expensive router, in my opinion it is not worth that kind of money.
I would say that the price is quite balanced.
more faster interfaces, better switch chip, 2x RAM, 8x NAND, 2x-8x faster traffic speed depending on filter/rules/encryption settings "for a few dollars more"
that means 70$ vs 219$
Go for it if you can. No worries that the next WAN speed upgrade will kill your setup.
