Is there any hope of a future update to Winbox that would include the following features?
1 - Show if the device is online.
2 - Show the currently installed version of the device.

Winbox already does that. It shows discovered devices (so they are online) and shows you ROS version, MAC and IP address of the device.
Have a look at The Dude for network monitoring.
