As far as I can tell, MikroTik does not currently produce any Wi-Fi 6E or Wi-Fi 7 APs. Are either of these on the product roadmap?

Well… Mikrotik doesn’t release any roadmaps so you will have to wait and be surprised like the rest of us 
More important question to ask: are all clients you plan to connect to those APs able to use full potential of 6E or 7 ?
Is your backbone network able to handle it ?

No, and they don’t need to be. Devices capable of 6E/7 will move to the 6 GHz band which will free up airtime for 6-and-lower devices remaining in the 5 GHz band.
